Homemade Peanut Brittle

Classic Peanut Brittle makes a tasty snack, dessert or food gift for any occasion. Packed with roasted peanuts, this recipe is easy to whip up in under 30 minutes using just a few other pantry staples.

Ingredients

  • 6 tablespoons unsalted butter, cubed
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups sugar
  • ½ cup corn syrup
  • ½ cup water
  • 2 cups roasted peanuts

Instructions

  1. Line a large baking sheet with parchment paper. Set aside.
  2. In a small bowl, combine the butter and vanilla extract. Set aside.
  3. In another small bowl, combine the baking soda and salt. Set aside.
  4. In a medium pot, add the sugar, corn syrup and water. Place on the stove over medium heat. Do not stir.
  5. Using a candy thermometer, check the temperature of the mixture frequently. When it reaches 260 degrees, add the peanuts and continue cooking, stirring frequently, until the mixture reaches 300 degrees.
  6. Remove from heat and quickly add the butter, vanilla extract, baking soda and salt. The mixture will start to puff up and change texture.
  7. Stir until butter is melted and thoroughly combined, then quickly spread brittle onto the prepared baking sheet. Allow brittle to cool completely, then break into pieces before serving.
