Ingredients
- ½ cup natural peanut butter
- 1 tablespoon maple syrup
- 1 tablespoon almond flour
- 1 ½ cups chocolate chips
Instructions
- Line a plate with parchment paper and line a mini muffin pan with paper mini muffin liners. Set aside.
- In a large bowl, use a hand or stand mixer to beat together the peanut butter, maple syrup and almond flour until thick and sticky like dough.
- Roll mixture into teaspoon-sized balls and press down to flatten into disks. Place on prepared plate and freeze for about 20 minutes.
- In a small saucepan, melt the chocolate chips over low heat, stirring frequently. (Or melt in a microwave-safe dish for 2 minutes, stirring every 30 seconds.)
- Using a spoon, spread a layer of melted chocolate into the bottom of each muffin liner. Place peanut butter disks on top of the chocolate layer, then fill each liner with chocolate until peanut butter layer is completely covered.
- Freeze peanut butter cups for 30 to 60 minutes or until completely set. Store in the freezer but allow to sit at room temperature for about 5 minutes before serving.
