Peanut Butter Crunch Cookies
Peanut Butter Crunch Cookies are soft on the inside and crispy on the outside. Made with crunchy peanut butter for an extra-peanutty touch, these make the perfect treat alongside a glass of cold milk.

Ingredients
- 1 ½ cups extra-crunchy peanut butter
- ½ cup light brown sugar
- ½ cup granulated sugar
- ½ cup (1 stick) unsalted butter, room temperature
- 1 large egg, room temperature
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
- In a large bowl, use a hand or stand mixer to beat together the peanut butter, both sugars and butter on medium speed until smooth. Add the egg and continue mixing until completely combined.
- Add the flour and baking powder and mix on low speed until a dough forms.
- Roll dough into tablespoon-sized balls and place about 2 inches apart on prepared baking sheets.
- Using a floured fork, flatten each ball of dough to about 1 inch thick, creating a crisscross pattern on top. Bake for about 20 minutes until cookies are lightly browned, rotating sheets halfway through.
- Transfer cookies to a wire rack to cool completely. Serve immediately or store cookies in an airtight container at room temperature for up to a week.
