Peanut Butter Crunch Cookies

Peanut Butter Crunch Cookies are soft on the inside and crispy on the outside. Made with crunchy peanut butter for an extra-peanutty touch, these make the perfect treat alongside a glass of cold milk.

Ingredients

  • 1 ½ cups extra-crunchy peanut butter
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • ½ cup (1 stick) unsalted butter, room temperature
  • 1 large egg, room temperature
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  2. In a large bowl, use a hand or stand mixer to beat together the peanut butter, both sugars and butter on medium speed until smooth. Add the egg and continue mixing until completely combined.
  3. Add the flour and baking powder and mix on low speed until a dough forms.
  4. Roll dough into tablespoon-sized balls and place about 2 inches apart on prepared baking sheets.
  5. Using a floured fork, flatten each ball of dough to about 1 inch thick, creating a crisscross pattern on top. Bake for about 20 minutes until cookies are lightly browned, rotating sheets halfway through.
  6. Transfer cookies to a wire rack to cool completely. Serve immediately or store cookies in an airtight container at room temperature for up to a week.
