Honey Mustard Barbecue Pork Skewers

Ingredients
- 1 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 ½ cups barbecue sauce
- 3 tablespoons honey
- 3 tablespoons Dijon mustard
- 1 teaspoon reduced-sodium soy sauce
- ½ teaspoon ground ginger
- 1 teaspoon black pepper
- 2 pounds boneless pork loin chops, cut into 1-inch strips
Instructions
- In a medium saucepan, heat oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until translucent, about 5 minutes.
- Add the barbecue sauce, honey, mustard, soy sauce, ginger and pepper and stir to combine. Reduce heat to low and simmer, stirring occasionally, for about 5 minutes. Remove from heat and set aside to cool for 10 minutes.
- In a gallon-size zip-close bag, combine the pork and half the cooled sauce. Close bag and place in the refrigerator to marinate for at least 2 hours or overnight. Store remaining sauce in the refrigerator for later use.
- Preheat grill to medium-high. Thread pork onto skewers, discarding the marinade remaining in the bag. Place skewers on grill and cook, turning occasionally, until pork is completely cooked through, about 8 minutes. Brush skewers with additional sauce and cook 1 to 2 minutes more. Serve immediately with remaining sauce on the side.
