Ingredients
- 1 pound (16 ounces) raw cashews
- 3 tablespoons honey
- 1 tablespoon unsalted butter
- ¼ cup brown sugar
- 2 tablespoons granulated sugar
- 2 tablespoons fresh rosemary, finely chopped
- ¾ teaspoon salt
- ¼ teaspoon cinnamon
- ¼ teaspoon cayenne pepper
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
- Place cashews in a medium bowl.
- In a small, microwave-safe bowl, combine the honey and butter. Microwave on high for 30 seconds or until butter is completely melted. Stir to combine, then pour mixture over the cashews and toss to coat. Spread cashews out in an even layer on the prepared baking sheet and roast for 5 minutes.
- In the same medium bowl, whisk together both sugars, rosemary, salt, cinnamon and cayenne. Sprinkle mixture over the cashews, toss to coat and return to oven to roast for 10 minutes, tossing halfway through.
- Set cashews aside until cool enough to handle, about 5 minutes, then separate to prevent them from sticking together as they cool. Serve at room temperature.
