Lemon Custard with Strawberries

Sweet and tart Lemon Custard with Strawberries makes the perfect springtime dessert for an Easter or Mother’s Day get-together. Serve this light and creamy treat with additional fresh berries and a dollop of whipped cream on top for an elegant presentation.

Ingredients

  • 1 ½ cups whole milk
  • 2 eggs
  • ⅓ cup plus 2 tablespoons sugar, divided
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 cup strawberries, sliced
  • 2 tablespoons lemon juice

Garnishes:

  • Whipped cream
  • Fresh strawberries, sliced
  • Lemon zest

Instructions

  1. In a blender, combine the milk, eggs, ⅓ cup sugar, cornstarch and lemon zest. Puree until well-combined and very creamy. 
  2. In a small bowl, toss together the strawberries, lemon juice and remaining 2 tablespoons sugar until combined. Set aside.
  3. Pour the custard mixture into a saucepan and cook over low heat, stirring constantly, until thick and creamy (about 10 minutes).
  4. Spoon the strawberry mixture into 6 small serving cups or bowls. Divide custard evenly over the berries. Refrigerate at least 30 minutes or until ready to serve.
  5. Garnish with whipped cream, lemon zest and strawberry slices just before serving.
