Lemon Custard with Strawberries

Ingredients
- 1 ½ cups whole milk
- 2 eggs
- ⅓ cup plus 2 tablespoons sugar, divided
- 2 tablespoons cornstarch
- 1 teaspoon lemon zest
- 1 cup strawberries, sliced
- 2 tablespoons lemon juice
Garnishes:
- Whipped cream
- Fresh strawberries, sliced
- Lemon zest
Instructions
- In a blender, combine the milk, eggs, ⅓ cup sugar, cornstarch and lemon zest. Puree until well-combined and very creamy.
- In a small bowl, toss together the strawberries, lemon juice and remaining 2 tablespoons sugar until combined. Set aside.
- Pour the custard mixture into a saucepan and cook over low heat, stirring constantly, until thick and creamy (about 10 minutes).
- Spoon the strawberry mixture into 6 small serving cups or bowls. Divide custard evenly over the berries. Refrigerate at least 30 minutes or until ready to serve.
- Garnish with whipped cream, lemon zest and strawberry slices just before serving.
