Maple Baked Apples with Ricotta Cream

Ingredients
- 4 medium apples (Pink Lady or Honeycrisp), sliced ¼- to ⅓-inch thick
- 2 teaspoons lemon juice
- 3 tablespoons maple syrup
- 1 teaspoon arrowroot powder (optional, for thickening juices)
- ½ teaspoon fresh ginger, grated (or ⅛ teaspoon ground ginger)
- ¼ teaspoon ground cinnamon
- Pinch of salt
- 2 tablespoons cold butter, thinly sliced
Ricotta Cream:
- 1 cup whole-milk ricotta cheese
- 2 tablespoons maple syrup
Instructions
- Preheat oven to 350 degrees. Spray a 9-by-9-inch glass baking dish with nonstick cooking spray.
- In a large bowl, combine the apple slices and lemon juice. Add the maple syrup, arrowroot powder (if using), ginger, cinnamon and salt. Toss to coat apples.
- Arrange apple slices in a single layer in the baking dish, overlapping slightly and alternating the direction of the apples for each row.
- Scatter the butter slices over the apples and bake until apples are fork-tender, about 30 minutes.
- Meanwhile, in a small bowl, whisk together the ricotta and maple syrup.
- Spoon baked apples into serving bowls and top each serving with a dollop of ricotta cream. Serve immediately.
