Maple-Balsamic Roasted Brussels Sprouts

Ingredients

  • 1 pound Brussels sprouts, quartered (about 4 cups)
  • 2 tablespoons maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon onion powder
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt 
  • Black pepper, to taste

Instructions

  1. Preheat oven to 425 degrees and line a large baking sheet with a nonstick cooking mat or parchment paper. 
  2. Combine all ingredients in a large mixing bowl. Toss to coat Brussels sprouts evenly, then spread them out in a single layer on the prepared baking sheet.
  3. Roast for 15 minutes, then remove from oven and stir. Return to oven and roast for about 5 more minutes, or until tender and single leaves become crispy. Serve warm.
