Ingredients
- 1 uncooked pie crust (homemade or store-bought)
- 8 ounces herb and garlic goat cheese
- 5-6 strips bacon, cooked and crumbled
- 2 peaches, pitted and sliced
- 1 egg
- 1-2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 425 degrees and line a baking sheet with parchment paper.
- Unroll store-bought pie crust dough (or roll homemade dough out into a circle about ¼ inch thick). Place on the prepared baking sheet.
- Crumble goat cheese and sprinkle over the center of the crust, leaving a 2-inch border around the edges. Layer the bacon and peaches over the cheese.
- Fold the dough edges toward the middle, crimping a little at a time to form a pleated pattern around the sides.
- In a small bowl, whisk the egg with 1 tablespoon water. Brush egg wash onto the edges of the galette.
- Bake for 40 minutes, rotating the baking sheet halfway through. Keep an eye on the crust edges and cover them with strips of aluminum foil if they begin to brown too quickly.
- Allow galette to cool, then garnish with parsley, slice and serve immediately.
