Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 1 jalapeño, seeded and diced
- 2 cups (about 3 medium) peaches, pitted and diced
- ½ cup tomato puree
- ½ cup brown sugar
- 2 tablespoons sorghum
- 1 tablespoon Dijon mustard
- ¼ cup apple cider vinegar
- ½ teaspoon cayenne pepper
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 2 ½ pounds boneless, skinless chicken thighs
Instructions
- Warm the oil in a medium saucepan over medium-high heat. Add the onion and jalapeño, and saute for about 5 minutes or until onion is translucent. Transfer to a blender.
- To the blender, add the peaches, tomato puree, brown sugar, sorghum, mustard, vinegar, cayenne, salt and pepper. Blend until smooth, then transfer mixture to the saucepan and cook over medium-low heat for 10 to 15 minutes, or until slightly thickened. Remove sauce from heat and set aside to cool.
- Preheat oven to 400 degrees with the rack in the middle. Line a sheet pan with aluminum foil and set aside.
- In a medium bowl, combine the chicken thighs with 2 cups of the cooled sauce and toss to coat. Transfer chicken to the prepared sheet pan and bake for 35 minutes, flipping and basting with additional barbecue sauce halfway through cooking.
- Set broiler to high and broil chicken for 5 minutes, or until slightly charred and golden-brown, watching carefully to prevent burning.
- Serve warm with the additional barbecue sauce to taste.
