Pumpkin Coffee Cake with Maple Glaze

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • 1 ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ½ teaspoon allspice
  • ¾ teaspoon salt
  • 1 cup pumpkin puree
  • ½ cup canola oil
  • ½ cup whole milk
  • 2 eggs
  • ¾ cup brown sugar
  • ¼ cup maple syrup
  • 1 orange, zested

For the Streusel:

  • ¼ cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons rolled oats
  • 2 tablespoons butter, melted 
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

For the Glaze:

  • ¾ cup powdered sugar
  • 1 tablespoon orange juice
  • 1 tablespoon maple syrup

Instructions

  1. Preheat oven to 350 degrees and spray a 9-inch round springform pan or loaf pan with nonstick cooking spray. Set aside.
  2. For the Cake: In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, allspice, and salt. In a separate bowl, whisk together the pumpkin, oil, milk, eggs, brown sugar, maple syrup, and orange zest. Pour the wet ingredients into the dry and mix until just combined. Pour batter into the prepared pan.
  3. For the streusel: In a small bowl, stir together all streusel ingredients to combine. Sprinkle streusel evenly over cake batter and bake for 40 to 45 minutes. Set aside to cool completely.
  4. For the Glaze: In a small bowl, whisk together all glaze ingredients to combine.
  5. Once cake is cool, remove from pan and drizzle glaze over the top before slicing and serving.
