Pumpkin Whipped Feta Dip

Pumpkin Whipped Feta Dip is a healthier alternative to classic cheese dips. Blend pumpkin puree with feta and yogurt until smooth and creamy, then top with toasted walnuts and herbs and serve alongside veggies, crackers or bread for dipping.

Ingredients

  • 8 ounces feta cheese, crumbled
  • ¾ cup Greek yogurt
  • ¼ cup pumpkin puree
  • 2 tablespoons olive oil, divided
  • 2 tablespoons honey, divided
  • ¼ teaspoon cayenne pepper
  • ¾ cup walnuts
  • 2 tablespoons parsley, chopped
  • 2 tablespoons mint, chopped
  • 2 teaspoons lemon zest
  • ¼ teaspoon black pepper
  • Vegetables, crackers and/or fresh bread (for serving)

Instructions

  1. In a food processor, combine the feta, yogurt, pumpkin, 1 tablespoon oil, 1 tablespoon honey and cayenne. Pulse mixture a few times to break down the feta, then blend until smooth and creamy, about 3 to 4 minutes. Scoop mixture into a serving dish and smooth the surface with the back of a spoon. Set aside.
  2. In a small pan over medium-high heat, toast walnuts until light golden and fragrant, about 4 to 5 minutes. Let cool slightly, then chop and scatter over the whipped feta.
  3. Top whipped feta with parsley, mint, lemon zest and black pepper. Drizzle the remaining oil and honey over the top. Serve with vegetables, crackers and/or bread.
