Spinach Winter Salad
A bright and flavorful Spinach Winter Salad is the perfect way to add fresh greens and a pop of color to your winter table. Layer spinach, bacon, dried cranberries and sweet pomegranate arils on a platter, then top with creamy goat cheese, croutons and a tangy orange maple dressing.

Ingredients
Dressing:
- ⅓ cup bacon grease or olive oil
- ½ medium onion, chopped
- ½ cup orange juice
- 1 tablespoon maple syrup or honey
- 1 tablespoon orange zest
- ½ teaspoon salt
- ¼ teaspoon black pepper
Salad:
- 5 ounces fresh spinach
- ½ cup cooked bacon crumbles
- ½ cup dried cranberries
- ½ cup pomegranate arils
- 4 ounces goat cheese, crumbled
- 1 cup croutons, homemade or store-bought
Instructions
- For the dressing: In a medium saucepan, warm bacon grease or oil over medium heat. Add onion and saute, stirring occasionally, until translucent, about 5 to 7 minutes.
- Add all remaining dressing ingredients and stir to combine. Cook until just heated through. Transfer mixture to a blender or food processor and puree until creamy. Set aside.
- For the salad: Layer the spinach, crumbled bacon, cranberries and pomegranate arils onto a large serving platter. Top with crumbled goat cheese and croutons.
- Drizzle desired amount of dressing over the salad and serve immediately.
