Spring-Inspired Cobb Salad

Ingredients

Dressing:

  • ⅔ cup mayonnaise
  • ⅓ cup cider vinegar
  • 2 cloves garlic
  • 2 tablespoons honey
  • 3-4 tablespoons fresh parsley
  • Salt, to taste
  • Pepper, to taste

Salad:

  • 8 cups spring greens
  • 8 slices thick-cut bacon, cooked until crispy and crumbled
  • 4 hard-boiled eggs, sliced
  • 1 pound asparagus, trimmed and steamed until crisp-tender
  • 8 ounces sugar snap peas, steamed 
  • 1 cup strawberries, sliced
  • 1 large avocado (or 2 small), sliced
  • ½ cup blue cheese crumbles

Instructions

  1. Add all dressing ingredients to a blender or food processor and puree until combined. Pour dressing into a jar and close with a lid. Store in the refrigerator until ready to use.
  2. Divide greens between 4 plates. Arrange bacon, eggs, asparagus, peas, strawberries, avocado and blue cheese on top of each salad.
  3. Drizzle salads with dressing and serve immediately.
