Ingredients
Dressing:
- ⅔ cup mayonnaise
- ⅓ cup cider vinegar
- 2 cloves garlic
- 2 tablespoons honey
- 3-4 tablespoons fresh parsley
- Salt, to taste
- Pepper, to taste
Salad:
- 8 cups spring greens
- 8 slices thick-cut bacon, cooked until crispy and crumbled
- 4 hard-boiled eggs, sliced
- 1 pound asparagus, trimmed and steamed until crisp-tender
- 8 ounces sugar snap peas, steamed
- 1 cup strawberries, sliced
- 1 large avocado (or 2 small), sliced
- ½ cup blue cheese crumbles
Instructions
- Add all dressing ingredients to a blender or food processor and puree until combined. Pour dressing into a jar and close with a lid. Store in the refrigerator until ready to use.
- Divide greens between 4 plates. Arrange bacon, eggs, asparagus, peas, strawberries, avocado and blue cheese on top of each salad.
- Drizzle salads with dressing and serve immediately.
