Strawberry Goat Cheese Salad

Ingredients

  • 5 ounces (1 package) spring mix greens
  • ½ cup strawberries, hulled and sliced
  • ¼ cup almonds, sliced
  • 4 ounces goat cheese, crumbled
  • 3 tablespoons chives, chopped (fresh or dried)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • Salt
  • Pepper

Instructions

  1. In a large bowl, toss together the spring greens, strawberries, almonds, goat cheese and chives.
  2. In a separate, smaller bowl, whisk together the vinegar and oil. Drizzle over the salad and toss to coat. 
  3. Season to taste with salt and pepper. Serve immediately.
