Tomato Peach Caprese Salad

Ingredients
- 4 ripe peaches, pitted and sliced into wedges
- 3 large tomatoes, cut into thick slices
- 8 ounces fresh mozzarella, thinly sliced
- Fresh basil leaves
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt, to taste
- Pepper, to taste
Instructions
- On a large serving platter, arrange the peaches, tomatoes, mozzarella slices and basil leaves in an overlapping pattern.
- In a small bowl, whisk together the oil and vinegar. Drizzle vinaigrette evenly over the peaches, tomatoes, mozzarella and basil.
- Season with salt and pepper to taste. Serve immediately.
