Blueberry Barbecue Pork Sliders

Blueberry Barbecue Pork Sliders give plain pork burgers a summer-inspired upgrade. Made with a homemade barbecue sauce featuring sweet blueberries, spicy jalapeños and tangy red onions, these sliders deliver a delightful balance of flavor in every bite.

Ingredients

For the Blueberry Barbecue Sauce:

  • 1 tablespoon vegetable oil
  • ½ small red onion, diced
  • 1 clove garlic, minced
  • 2 cups blueberries
  • ½ jalapeño, diced
  • ½ cup ketchup
  • ⅓ cup apple cider vinegar
  • 3 tablespoons brown sugar
  • ½ teaspoon salt
  • ½ teaspoon cayenne pepper

For the Pork Sliders:

  • 3 tablespoons vegetable oil, divided
  • 1 pound ground pork
  • 2 tablespoons red onion, diced
  • ¼ cup breadcrumbs
  • 2 tablespoons low-sodium soy sauce
  • ½ teaspoon red chili flakes (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For Assembly: 

  • 8 slider buns
  • ½ cup mayonnaise 
  • 8 slices Muenster cheese
  • 8 slices fresh lettuce
  • 2 tomatoes, sliced
  • ½ cup pickled red onions, homemade or store-bought

Instructions

  1. For the sauce: Heat oil in a medium pot over medium-high heat. Add onion and garlic and saute for 5 minutes. Transfer mixture to a blender and add the rest of the sauce ingredients. Blend until smooth, then return to the pot to continue cooking over medium-low heat for 10 to 15 minutes, or until slightly thickened. Set aside to cool.
  2. For the burgers: In a medium bowl, use a fork to mix together 2 tablespoons oil with all remaining burger ingredients. Shape mixture into 8 slider patties.
  3. Warm remaining 1 tablespoon oil in a large skillet over medium heat. Add patties to skillet and cook 3 to 4 minutes per side, or until completely cooked through.
  4. To assemble: Toast slider buns and spread 1 tablespoon mayonnaise over each bottom bun. Top each bottom bun with a burger patty, a slice of cheese, a dollop of blueberry barbecue sauce, lettuce, a tomato slice and 1 tablespoon pickled red onions. Serve warm.
