Ingredients
For the Crust:
- 2 cups all-purpose flour
- ¼ cup sliced almonds
- ½ cup sugar
- Zest of 1 lemon
- ¾ teaspoon salt
- 1 cup butter, melted
For the Filling:
- 6 eggs
- 2 cups sugar
- ⅓ cup flour
- Zest of 1 lemon
- ¼ teaspoon salt
- 1 cup fresh lemon juice
- 6 ounces fresh blueberries
- Powdered sugar, for serving (optional)
Instructions
- Preheat oven to 325 degrees. Line a 13-by-9-inch baking pan with parchment paper and grease with nonstick cooking spray. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, mix together all crust ingredients except butter. Once combined, set the mixer to low speed and slowly drizzle in the butter. Continue mixing just until a dough comes together.
- Press dough mixture evenly into the bottom of the prepared baking pan and bake for 20 to 22 minutes.
- While crust bakes, prepare the filling. In the bowl of the mixer fitted with the whisk attachment, combine the eggs, sugar, flour, lemon zest and salt. Mix thoroughly until no lumps remain. Add the lemon juice and continue mixing until smooth.
- Pour filling over the prepared crust and sprinkle blueberries evenly over the top. Bake for 35 minutes, rotating the pan halfway through, until filling is just set.
- Allow to cool at room temperature for at least 1 hour, then refrigerate for at least 4 hours before serving. To serve, slice into 8 equal bars and dust each with a light coating of powdered sugar, if desired.
