Caramel Apple Pie Bars

These fall-inspired Caramel Apple Pie Bars showcase sweet seasonal apples spiced with cinnamon and cardamom under a crumbly streusel topping drizzled with caramel sauce.

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • ½ teaspoon salt
  • 12 tablespoons butter, melted

For the Filling: 

  • 2 pounds Granny Smith apples, peeled, cored and sliced ¼-inch thick
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon flour
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon cinnamon
  • ½ teaspoon cardamom
  • ¼ teaspoon salt

For the Topping:

  • ½ cup flour
  • ¼ cup rolled oats
  • ¼ cup sugar
  • ¼ cup walnut pieces
  • ½ teaspoon salt
  • 6 tablespoons butter, melted
  • Caramel sauce, homemade or store-bought

Instructions

  1. Preheat oven to 350 degrees. Line a 9-by-13-inch baking dish with aluminum foil and spray lightly with cooking spray. Set aside. 
  2. For the crust: In a medium bowl, combine graham cracker crumbs, both sugars and salt. Drizzle with melted butter. Stir well with a spatula to combine, then press evenly into the bottom of the prepared baking dish. Bake for 10 minutes, then set aside to cool.
  3. For the filling: In a large pot, combine all filling ingredients. Cook over medium heat for 10 minutes, or until most of the liquid has evaporated but the mixture is not completely dry. Spread filling evenly over the crust.
  4. For the topping: In a medium bowl, combine flour, oats, sugar, walnuts and salt. Drizzle with melted butter and stir well to combine. Spread streusel mixture evenly over the top of the filling.
  5. Bake for 40 to 45 minutes until the streusel topping is golden brown. Let cool at room temperature for 20 minutes, then refrigerate for at least 1 hour.
  6. Slice into bars and drizzle with caramel sauce before serving.
