Grilled Chimichurri Chicken

Ingredients

  • 4 medium chicken breasts (about 2 pounds)

Marinade:

  • 1 cup buttermilk
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Chimichurri:

  • ¾ cup olive oil
  • ½ cup fresh parsley, minced
  • 2 tablespoons cilantro, minced
  • 2 tablespoons fresh chives, minced
  • 2 tablespoons fresh basil, minced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon hot sauce
  • 1 teaspoon salt

Instructions

  1. In a medium bowl or shallow dish, whisk together all marinade ingredients. Place chicken into the marinade, cover the bowl, and marinate chicken in the refrigerator for 4 to 8 hours.
  2. In a small bowl, whisk together all chimichurri ingredients until well combined. Cover and store in the refrigerator until ready to serve.
  3. When chicken is done marinating, preheat grill to medium. Remove chicken breasts from marinade and grill 4 to 5 minutes per side, or until internal temperature reaches 165 degrees. 
  4. Slice grilled chicken and serve with chimichurri on top.
