Ingredients
- 1 cup buttermilk
- 3 tablespoons unsalted butter, melted
- 1 egg
- ½ cup green onions, sliced (optional)
- 1 jalapeno, stems and seeds removed, chopped (optional)
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon granulated garlic
- 1 teaspoon ground paprika
- 1 teaspoon salt
- 4-5 cups canola oil
Instructions
- In a large bowl, whisk together the buttermilk, butter and egg. Mix in the green onions and jalapeno, if using.
- Add the cornmeal, flour, baking powder, baking soda, garlic, paprika and salt and mix to combine.
- In a large, heavy-bottom pot, heat oil to 350 degrees.
- Once oil is hot, use a scoop or spoon to form hushpuppies and drop batter into the oil. Cook 2 to 3 minutes on each side, then remove from oil and place hushpuppies on a paper towel-lined plate to drain off excess oil. Repeat with remaining batter. Serve warm.
