Ingredients

  • 1 cup buttermilk
  • 3 tablespoons unsalted butter, melted
  • 1 egg
  • ½ cup green onions, sliced (optional)
  • 1 jalapeno, stems and seeds removed, chopped (optional)
  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon granulated garlic
  • 1 teaspoon ground paprika
  • 1 teaspoon salt
  • 4-5 cups canola oil

Instructions

  1. In a large bowl, whisk together the buttermilk, butter and egg. Mix in the green onions and jalapeno, if using.
  2. Add the cornmeal, flour, baking powder, baking soda, garlic, paprika and salt and mix to combine.
  3. In a large, heavy-bottom pot, heat oil to 350 degrees.
  4. Once oil is hot, use a scoop or spoon to form hushpuppies and drop batter into the oil. Cook 2 to 3 minutes on each side, then remove from oil and place hushpuppies on a paper towel-lined plate to drain off excess oil. Repeat with remaining batter. Serve warm.
