Mini Cheese Grits Casseroles

Mini Cheese Grits Casseroles are the perfect make-ahead brunch dish for a big group. Prepare the cheesy grits the night before, then divide them between single-serving ramekins and refrigerate overnight. In the morning, simply pop them in the oven and serve with crumbled bacon and chives on top.

Ingredients

  • 1 ½ cups uncooked quick-cooking grits
  • 1 teaspoon salt
  • 2 large eggs
  • 1 large egg yolk
  • 1 cup half-and-half
  • 1 teaspoon dry mustard
  • ¼ teaspoon black pepper
  • 8 ounces (about 2 cups) cheddar jack cheese, shredded
  • Nonstick vegetable spray
  • 2 tablespoons fresh chives, chopped (optional, for garnish)
  • 2 strips uncured bacon, cooked and crumbled (optional, for garnish)

Instructions

  1. In a large saucepan, bring 4 ½ cups water to a boil over high heat. Add the grits and salt. Reduce heat to medium-low and cook, stirring occasionally, until grits are thickened and tender, about 5 minutes. Remove from heat, then cover and let stand for 5 minutes
  2. Meanwhile, in a medium bowl, whisk together the eggs, yolk, half-and-half, mustard and pepper. Stir the egg mixture into the grits. Add the cheese and continue stirring until thoroughly combined and cheese has melted.
  3. Coat 12 4-ounce ramekins with nonstick vegetable spray. Divide the grits evenly between each ramekin. Cover and chill for 8 hours or overnight.
  4. In the morning, preheat oven to 350 degrees. Uncover the ramekins and place them on a baking sheet. Let them stand at room temperature for about 15 minutes.
  5. Bake grits until puffed and the edges are set, about 40 minutes. Remove from oven and let cool for about 10 minutes. Sprinkle each portion with chives and crumbled bacon, if desired, and serve warm.
